Divinity is pure white heaven! It is a cross between fudge and marshmallows. This has been a family recipe for over 50 years. Enjoy!
Heat sugar, syrup, water, and salt. Stir until sugar has dissolved. Boil without stirring, to a very firm ball. Beat egg whites. Pour egg whites into the hot syrup in a thin stream. Beat constantly. Beat until it holds its shape when dropped from a spoon. Add vanilla and very gently fold in nuts if using. Drop on wax paper. Let cool.

I would actually beat it until a little frothy not to stiff peaks but able to still pour in the egg whites in a thin stream…

Hi Clueless– have to say that sounds kind of funny! Anyway the whole process is the cook time so from start to finish it should take you 30-40 minutes. I put my gas burner on med-high and cooked the sugar until the temp on the candy thermometer read Hard Ball… My candy thermometer actually spells it out for me in case i can’t read the little lines! Ha! once it hits Hard Ball remove it from the heat add the egg whites and beat away. Wear an apron! I kind of got sugar on my sweat shirt from the flying sugar! hope this helps!

When the recipe says beat the egg whites, do you mean just beat them a little bit or beat until frothy?

This sounds deliciously delightful to my tastebuds, but I’m not sure what the cooking time refers to. I’m a newbie in the kitchen, so if you could just clarify what I’m cooking for 40 minutes and at what temperature, it would be greatly appreciated! Thanks so much, and I’m sorry for my cluelessness – lol!
