When I see local strawberries coming on, I’m assured spring is here! These Super Easy Strawberry Shortcake Biscuits are so easy, you will have a delicious dessert ready in no time!
Preheat oven to 425ºF.
In a large bowl, mix strawberries and sugar; set aside.
For the shortcake biscuits, in a medium bowl, combine baking mix, sugar, egg, milk, and butter. Stir until soft dough forms. Turn onto a lightly floured surface. Knead gently 8-10 times.
Pat or roll out 1/2 inch thick. Cut with a 3-inch floured cutter. Place 1 inch apart on ungreased baking sheet.
Bake 10–12 minutes. Cool. Separate shortcakes and fill with sweetened berries. Top with whipped topping. Place lid on top and garnish with more whipped topping and strawberries.
Store leftover biscuits in tightly covered container.
