A very moist cake. Great for breakfast with a cup of coffee. I made it a lot for my mother-in-law because she was a diabetic.
Combine raisins, dried apples, and water in a saucepan. Cook uncovered until water has evaporated and fruit is soft. Set aside.
In a large bowl, combine flour, baking soda, salt, and spices. In another bowl, combine eggs, applesauce, sweetener, oil, and vanilla. Add nuts and fruit mixture. Mix well. Add dry indgredients and blend thoroughly. Pour into a 10-inch greased and floured bundt pan.
Bake at 350 F for 35 to 40 minutes or until done.
