Delicious, crumbly, melt in your mouth French-Canadian fudge. A must-have for Christmas, but good any time of the year.
Stovetop Instructions:
Mix sugars and cream together.
Boil until the mixture reaches softball stage on a candy thermometer (alternatively, boil until a spoonful dropped into a glass of ice water forms a ball).
Remove from heat and stir in butter and vanilla.
Pour into a greased square pan or pyrex dish.
Chill until firm, cut into small squares*.
*Note: This is a very sweet candy.
Alternate Microwave Instructions:
Mix sugars and cream together.
Microwave for 12 minutes, stirring 3 times throughout (after 4 minutes, 8 minutes, and 12 minutes).
Drop a spoonful into a glass of ice water, if it forms a ball, then stop cooking it. If not, microwave until it does.
Stir in butter and vanilla.
Pour into a greased square pan or pyrex dish.
Chill until firm, cut into small squares.
