Description

Stuffed strawberries that would be great for the 4th of July or anytime. I calculated 2 per person, which gives a serving for 12. But these are so good, some may eat more than their 2 shares, so make plenty!

Ingredients

  • 24 pieces Strawberries
  • 8 ounces, weight Mascarpone Cheese
  • 3 Tablespoons Powdered Sugar
  • 1 teaspoon Vanilla
  • 24 pieces Blueberries

Preparation

Cut the tops and bottoms off the strawberries. With the small end of a melon baller scoop out the inside of the strawberries.

Beat the mascarpone cheese, powdered sugar and vanilla till smooth and slightly fluffy.

When the cheese mixture is done, put into a pastry bag (or Ziploc bag with a corner cut) and pipe into the strawberries. I used a #32 tip.

Top each strawberry with a blueberry and enjoy. You can make these ahead of time and keep them in the refrigerator till ready.

I’m going to make these this weekend for my 4th of july get together but I think I’ll just scoop out the top of the strawberries & fill with whipped cream, since I like my strawberries with whipped cream it’s a cute presentation thanks for the idea!

What a cute little recipe! We made these for a Memorial Day cookout and everyone loved them – even the kids! I’ll definitely make these again – except that I’ll double the batch next time!

I made these for a garden party I was hosting. I thought they were very tatsy and not too sweet to overpower the fruit. Bummer part is they do not keep as leftovers very well! People loved them.
