Description

Strawberry Lemon Fool – an easy dessert that is sweet, tart and fluffy. Great for casual gatherings and can be dressed up for dinner parties.

Ingredients

  • 1 pound Fresh Strawberries, Hulled And Sliced
  • ¼ cups Granulated Sugar
  • 1 cup Heavy Whipping Cream
  • 2 Tablespoons Powdered Sugar
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon (heaping) Lemon Zest (zest Of About 1 Lemon)
  • 2 whole Strawberries, Halved (optional For Garnish)
  • 4 whole Mint Leaves (optional For Garnish)

Preparation

Chill a medium sized bowl and your beaters in the freezer while you start the recipe.

Combine the 1 pound of sliced strawberries and granulated sugar into a medium sized bowl. Let sit for 10 minutes. Then purée half of the strawberries. Pour the strawberry puree back into the bowl of the remaining sliced strawberries.

In a medium-sized bowl (the one you had in the freezer), add heavy whipping cream, powdered sugar, lemon juice, and vanilla extract. Beat until soft peaks form (about 5 minutes to 7 minutes – do not over beat or you’ll have butter). Gently fold in lemon zest. (If you use a cold bowl and cold beaters the cream will whip up faster)

Add the sliced strawberry/puree mixture to the whipped cream and gently fold to combine. Divide equally into 4 glasses or bowls and garnish with a fresh strawberry half and mint leaves.

Cover with plastic wrap and pop into the fridge until you’re ready to eat.
