Description

Lemon cookie bars filled with bits of fresh strawberries. Tastes like summer in each bite!

Ingredients

  • FOR THE BARS:
  • 2-¼ cups All-purpose Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ¾ cups Granulated Sugar
  • 1 cup Room Temperature Butter
  • 1 whole Beaten Egg
  • 1 Tablespoon Freshly Squeezed Lemon Juice
  • 3 Tablespoons Grated Lemon Zest
  • ½ cups Diced Fresh Strawberries
  • FOR THE GLAZE:
  • 1 cup Confectioners Sugar
  • ½ whole Lemon, Juiced

Preparation

For the bars:
Preheat oven to 350 F. Line an 8 x 8 baking dish with foil. Set aside.

In a large bowl sift together flour, baking powder and salt. Set aside.

In the large bowl of your electric mixer cream together the sugar and butter. Mix in egg, lemon juice and zest. Mix in the flour mixture. Fold in diced strawberries by hand.

Press dough into the bottom of the prepared pan.

Bake for about 35-45 minutes or until a toothpick is inserted and comes out clean. Remove from oven and let the bars cool before cutting and glazing.

For the glaze:
Whisk together the confectioners’ sugar and lemon juice. Drizzle over cooled cut bars.

Yes the glaze was very tasty but the bars were just boring.I feel like I wasted some beautiful strawberries & 2 sticks of butter.Won’t be making these again.

These are wonderful! Made them for a family dinner. Very soft and crumbly- reminded me of a very yummy scone. They were not too sweet and the lemon glaze made them oh so good. Will definitely be making them again!

I picked up a carton of local strawberries today, came here and found this tasty treat for my family tonight. The bar is very good but the glaze makes it! My batter was very thick making it a little difficult to fold in the strawberries. I used a strip of parchment paper the width of my pan and it lifted right out. My family loved it.

Oh my giddy Aunt!! This recipe is excellent! I thought the bars would be hard, but they are soft and lemony and the bites are strawberry are sublime. :) Thanks so much for sharing — next time I make these I will double the recipe ’cause there weren’t enough of these for our family. :-)
