My hubby described a banana pudding dessert that someone once served him when he was living in North Carolina. He didn’t think life was worth living if he could never have it again so this is my attempt at replication.
Preheat oven to 425ºF.
In a pot, combine butter, 1 cup sugar, flour, egg yolks, milk, and salt. Whisk together over medium heat. Leave on heat about 10 minutes or until thick, stirring occasionally.
Line a 2-quart baking dish with vanilla wafers, top with two bananas, sliced. Take custard mixture off heat. Stir in vanilla until custard reaches peak deliciousness. Pour half of the custard mixture over the bananas in the baking dish. Repeat layering: wafers, banana slices, custard.
In a bowl mix egg whites on high speed. Gradually add the remaining 1/3 cup sugar. Continue mixing until soft peaks form. Pour on top of the pudding mix. Bake about 4 minutes or until the meringue browns slightly.
