Description

Cake that you can eat for breakfast. What’s more perfect than that?

Ingredients

  • 1 cup Sugar
  • 2 sticks Butter (unsalted And Softened)
  • 3 whole Eggs
  • 2 cups All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • 1-½ teaspoon Baking Soda
  • ½ cups Sour Cream
  • 1 cup Streusel (Recipe Below)

  • FOR THE STREUSEL:
  • ¼ cups Light Brown Sugar, Packed
  • ½ cups All-purpose Flour
  • 2 teaspoons Ground Cinnamon
  • ¼ teaspoons Salt
  • 3 Tablespoons Butter (cold And Cut Into Chunks)
  • ¾ cups Walnuts (optional)

Preparation

1. Preheat oven to 375 degrees and grease your preferred baking pan (I used a bundt pan).

2. In a large bowl, cream together the cup of sugar and two sticks of butter.

3. Add eggs and beat well.

4. Mix in the flour, baking powder, baking soda and sour cream until ingredients are just combined. Set aside.

5. To make the streusel: in a bowl combine the brown sugar, flour, cinnamon, salt and chunks of butter. Pinch together with fingers until it forms a crumble. Add walnuts if desired.

6. Spoon 1/2 of batter into the pan using a knife to spread out evenly. Sprinkle 3/4 of streusel over the batter.

7. Spread the remaining batter in the pan and top with the remaining streusel.

8. Bake for 50 minutes or until it passes the toothpick test.

9. Enjoy!

Either the temperature is wrong or my oven has gone wonky because I started smelling this cake at 43 minutes and by then it was way over done. I threw it away.
