Yummy cupcakes that look and taste like a Snickerdoodle cookie!
Preheat oven to 350 degrees F.
Cream butter, sugar, vanilla, eggs and sour cream together.
In separate bowl mix together flour, baking soda, baking powder, cream of tartar.
Combine all the above ingredients.
Using a scoop, i.e. large cookie scoop, ice cream scoop, etc… Scoop out a portion of cupcake mixture. Drop mixture into a bowl of the 1 Cup Sugar + 2 Tablespoons Cinnamon. Roll dough ball around in mixture until well coated.
Drop dough ball into Greased Muffin Tins.
Bake 20 minutes.
Mmm, mmm, good. They look, smell and taste just like a Snickerdoodle Cookie! Would be good with a dollop of Buttercream Frosting on top too.

My mom made these…twice already! Tastes just like snickerdoodle cookies!
She did make a small change…sprinkle cinnamon and sugar on the bottom of the cupcake liner, scoop in a little dough, sprinkle cinnamon and sugar, scoop in a little dough, etc., until filled, ending with cinnamon and sugar on top. Cinnamon and sugar is then swirled throughout the cupcake.
I don’t think there could ever be too much cinnamon and sugar!!!

I made these today and I had a bit of a disaster on my hands.
6 minutes into baking there was smoke billowing out of my oven! I’ve come to the conclusion that using my ice cream scoop made muffins that were too big. With baking powder, baking soda and cream of tartar these muffins rose to the occasion! Make them small. Fill only half way…they will rise, trust me. The ones that did make it were absolutely delicious. I’m going to try this one again later this week, but I’m going to find a different scoop to fill the muffin tin.

Making these in the morning for breakfast! The kids have off for mid-winter break and we are expecting a few inches of snow. It will be a nice treat to wake up to! Thanks for sharing!
