Description

Ricotta might not have the allure of its cousin cream cheese but wait till you try this super delicious, smoky caramelized cheesecake. Ricotta will be your new best friend!

Ingredients

  • 2-½ Tablespoons Butter, Unsalted
  • 1 pound Ricotta Cheese
  • 5 Tablespoons Dark Brown Sugar (packed)
  • ¼ cups Cashew Nuts, Broken
  • ¼ cups Raisins, Black
  • 4-½ ounces, fluid Sweetened Condensed Milk (1/3rd Of A 14 Oz. Can)
  • 3-½ Tablespoons Semolina Flour (can Substitute With Durum Wheat Flour, Ground Couscous OR Cream Of Wheat In A 1:1 Ratio)

Preparation

1. Preheat oven to 350 degrees F. Line a loaf pan (9″x3″) with parchment paper (or coat with butter).
2. Melt butter in a saucepan. Remove from heat and add the rest of the ingredients to the pan. Mix well in either a clockwise or reverse-clockwise motion (but not both – i.e. stay in the same direction).
3. Pour into the prepared pan and tap well to evenly distribute the mixture in the pan. Smoothen the top, if needed.
5. Bake for 60-75 minutes or until a knife/toothpick inserted into the cake comes out clean.
6. Let it cool completely. Chill it in the fridge for 3-4 hours before slicing and serving.
