Description

Easy, delicious and healthy. Sorta.

Ingredients

  • ½ cups Salted Caramel Sauce Or Dulce De Leche, Divided (see Note)
  • 3 cups Plain Or Vanilla Nonfat Greek Yogurt
  • ¼ teaspoons Vanilla Or Vanilla Bean Paste
  • 6  Popsicle (sticks)

Preparation

Into a small microwave safe bowl, add half of the salted caramel. I used Trader Joe’s Salted Caramel Sauce for this step. Heat it in the microwave for 20 seconds, until just warm and runny. Add this into the yogurt in a small bowl and combine thoroughly. Add the vanilla and stir to incorporate.

In a separate small microwave safe bowl, very slightly warm the remaining half of the caramel sauce. I used dulce de leche for this step. Heat it in the microwave for about 5-10 seconds. You want it pliable but not runny. Drizzle it over the top of the yogurt and fold it very lightly into it. Two or three turns of the spatula only.

Carefully spoon the mixture into your popsicle molds, filling to the top of each mold. Cover with aluminum foil and freeze for 60 minutes. Insert popsicle sticks in the mold, through the foil and freeze until completely firm, roughly 5-6 hours more.

To serve, run the bottom of the molds carefully under lukewarm water for 1 minute, avoiding getting the tops wet. Slide the popsicles from the mold and devour.

Note: I used half each Trader Joe’s Salted Caramel Sauce and dulce de leche. Makes 6 standard size popsicles but this number will vary based on the size of your mold.
