Mangoes roasted with walnuts and brown sugar. Serve over a scoop of vanilla ice cream.
Preheat oven to 425 F.
Cut the mangoes in half and scoop out the flesh into a medium-sized bowl. In the same bowl combine the rest of the ingredients and mix well. Let stand for 15 minutes.
Pour the mango mixture into a baking dish and bake for 10 to 12 minutes, or until browned on top.
Serve warm over vanilla ice cream.
