My neighbor made this for my baby shower before my daughter was born; she’s now 28 and a mom herself. Even those who say they don’t like rhubarb like this yummy cake.
Spread chopped rhubarb over the bottom of a greased and floured 9 x 13 cake pan. Sprinkle sugar and dry Jello over the rhubarb. Pour cake batter (you’ll typically need water, eggs, and oil, as directed in mix package) over rhubarb mixture and bake 30 minutes at 350F. Let cool before serving.

Also the baking time is increased to about 60 minutes.

I make something similar, but instead of making up the cake batter, you just sprinkle the dry cake mix on top of the rhubarb/sugar/jello. Then you pour 1 c. water on top of the dry cake mix, and follow that with 1/2 c. melted butter. We call it rhubarb dump cake, and it’s pretty yummy, too!
