Description

These gorgeous little cakes taste even better than they look. Ready to eat within 15 minutes, this red velvet version of the classic molten lava cake is perfect for Valentine’s Day with your love!

Ingredients

  • ½ sticks Unsalted Butter
  • ½ cups Dark Chocolate Chips
  • 1 whole Egg
  • 1 whole Egg Yolk
  • 1 teaspoon Vanilla
  • 2 teaspoons Red Food Coloring
  • ¼ cups Powdered Sugar, Plus More For Topping
  • 1 pinch Salt
  • 2 Tablespoons Flour
  • Strawberries And Whipped Cream, For Topping

Preparation

Preheat oven to 400ºF.

In a microwavable bowl, melt butter with chocolate chips in 20-second intervals, until melted, stirring frequently.

In another bowl, whisk together egg, egg yolk, vanilla, and red food coloring. Pour in melted chocolate to combine. Then stir in powdered sugar, salt, and flour.

Pour into ramekins and place ramekins into preheated oven. Bake for 10 minutes.

Once baked, turn them upside down on a plate and top with powdered sugar, strawberries, and whipped cream. Enjoy immediately while they are still hot and oozing with “lava!”

These were delicious!! I had never eaten lava cake, and had certainly never made it! Our daughter was home also so I divided it among 3 ramekins–the perfect size.
