One of my college roommates gave me this recipe. Great for snacking or for breakfast. It’s incredibly moist. Give it a try, you’ll be glad you did!
1. Grease and flour a 9 x 13″ baking pan.
2. Combine sliced apples and sugar in a large bowl. Let the mixture stand for one hour, occasionally stirring apples making sure they create a nice sugar syrup.
3. While the apples are sitting, combine the flour, cinnamon, baking soda and salt in another bowl and stir together. Preheat oven to 350 F.
4. After the apples have set for an hour add the vegetable oil, eggs, vanilla, and the chopped nuts into the apple mixture. Stir until well blended.
5. Add the flour mixture and stir until thoroughly blended. Pour into the prepared 9 x 13 ” pan.
6. Bake at 350 F for 40 to 50 minutes until a toothpick inserted in the center comes out clean.

So I was looking for a nice apple cake for my son’s school program and picked this one…then I went back and looked…it’s from my MOM!! Hahaha, love you momma, and your apple cake

I made this last week, and had to freeze half of it to keep from eating it all. A few tweaks: I didn’t peel my apples, just cut them into small bite size pieces. I used 1 1/2 cups chopped walnuts, and added just a pinch of nutmeg. It’s wonderful. Try it.
