Description

I came across something similar to these at Whole Foods. OMG, are they good!

Ingredients

  • ½ cups Butter, Softened
  • 1 cup Brown Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1-¼ cup Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 2 cups Old Fashioned Oats, Divided
  • 1 cup Raspberry Jam Or Preserves

Preparation

Preheat oven to 350 degrees. Grease a 9×9 pan.

Cream butter and sugar until light and fluffy. Add egg and vanilla and continue beating until combined.

In a separate mixing bowl, combine flour, baking soda and salt. Add to the creamed butter mixture and mix until well combined. Stir in 1 3/4 cups of oats.

Press 2/3 of the dough into the bottom on the 9×9 pan. Spread raspberry jam over the oatmeal base. Add 1/4 cup of oats to the remaining dough. Crumble mixture evenly over the top of the raspberry jam.

Bake for 25 to 30 minutes or until golden brown. Cut into squares when cool. Store leftovers in refrigerator.
