The combination of raspberry and basil in this delicious sorbet is really refreshing on a hot Summer’s day.
1. Combine the sugar and water in a pan, bring to a boil and then lower heat and let it simmer for about five minutes. Remove from the heat and let it cool.
2. In a food processor, blend the basil, raspberries and lime juice until smooth.
3. Mix the raspberry mixture together with the sugar syrup and place in a plastic container. Freeze until set, about three hours. After the first hour, stir the mixture with a fork, and continue to do this every half hour or so, to give it a lighter texture.
4. Serve on its own, or with some fresh seasonal fruit.
