Description

These raspberry bars have become the neighborhood favorite. The secret ingredient: white chocolate chips! Very flavorful, and very rich. To die for !

Ingredients

  • FOR THE FIRST LAYER:
  • 1-¼ cup Flour
  • ½ cups Sugar
  • ½ cups Butter (No Substitutes)
  • 8 ounces, weight Seedless Raspberry Jam
  • _____
  • FOR THE TOPPPING:
  • ⅔ cups Flour
  • 3 Tablespoons Sugar
  • 1 cup Chopped Pecans
  • ½ bags (12 Oz. Bag) White Chocolate Chips, Chopped To Small Pieces
  • 6 Tablespoons Butter
  • ½ teaspoons Almond Extract

Preparation

Mix all the topping ingredients until crumbly. Set aside.

To make the first layer, blend flour, sugar, and butter. Press into a greased cookie sheet or bar pan. Bake at 350 degrees for about 15 minutes or until very lightly browned. Spread jam over the layer.

After the first layer comes out of the oven and the jam has been spread, sprinkle the topping over the jam. Bake at 350 degrees for 15-20 minutes. Cool completely before cutting.

I find it easier to have the topping ready to go—everything chopped and mixed before starting this cookie, as you do not want to wait to spread the jam after it comes out of the oven.

To die for!

These bars are amazing – and they freeze well, too! I make them in a 9 X 13 pan and they are perfect. They are very rich, so you can cut them into small portions. Wonderful!!

These are soooo good and cute looking! I just fell in love with these squares! They are soooo good! I have a sweet tooth so I didn’t think they were that rich, just right! Thanks for sharing this recipe!
