This orange-scented and raisin-studded vanilla cake is simple and not overly sweet. You can choose to frost it with a simple vanilla glaze or even a chocolate ganache.
Preheat oven at 375 degrees.
Place shortening or butter in a mixing bowl. Sift in dry ingredients.
Add egg and half the milk; mix until flour is moistened.
Beat for 2 minutes at medium speed with beaters/mixer.
Add the remaining milk and vanilla, the zest and the chopped raisins. Beat for another minute longer until everything is combined.
Bake in a lightly greased and floured 9×9 pan, or mini bundt pans/cake forms for 20-25 minutes until done.
Let cool and frost if desired.
