Description

A delicous recipe that my mother gave me. It is a cake served in Quebec.

Ingredients

  • FOR THE CAKE:
  • 1 cup Boiling Water
  • 1 cup Chopped Dates
  • 1-½ cup Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ cups Chopped Walnuts (optional)
  • ¼ cups Butter, At Room Temperature
  • 1 cup Sugar
  • 1  Egg
  • 1 teaspoon Vanilla
  • FOR THE ICING:
  • ¼ cups Heavy Cream
  • 1 cup Unsweetened Shredded Coconut
  • ⅔ cups Brown Sugar
  • 5 Tablespoons Butter

Preparation

Preheat oven to 350°F. Butter and flour a 9 x 9 baking dish.

Combine dates and boiling water. Let mixture stand for 1 hour.

In a bowl, combine flour, salt, baking powder, baking soda and walnuts.

In another mixing bowl, cream butter and sugar. Add egg and vanilla, and beat well.

Into the creamed mixture, slowly add the dry ingredients alternately with the dates mixture, and mix well.

Pour the batter into the prepared pan.

Bake the cake for 40 minutes or until a toothpick inserted in the center comes out clean. (It may take more time)

Mix all icing ingredients in a small saucepan. Bring mixture to a boil; and then boil for three minutes, until thickened. Spread the icing over the cake.

Then broil the cake for 1 or 2 minutes.
