Yummy pumpkin pie squares which earned the compliment “I could eat these everyday for the rest of my life.”
Crust: Combine flour, oats, brown sugar and the melted butter. Mix until crumbly, then press into a 9×13 ungreased pan. Bake at 350 degrees for 15 minutes.
Filling: Combine pumpkin, milk, eggs, sugar, pumpkin pie spice and salt; pour into baked crust. Bake at 350 degrees for 20 more minutes.
Topping: Combine walnuts, brown sugar and melted butter; sprinkle over the pumpkin filling. Return to the oven for another 20 minutes at 350 degrees, or until filling is set.
Cool in the pan and cut into squares. Serve topped with whipped cream.

Made these (last minute) last night and everyone loved them — we think these could easily replace pumpkin pie on Thanksgiving and will now be our “go to” pumpkin dessert.

Yum! I did make two tiny changes — I added pumpkin pie spices to the filling (cinnamon, pie spice, and some ginger), and I used pecans instead of walnuts (personal choice).
It was easy to make and delicious! Thanks!
