Description

Grandma’s delicious pumpkin bars—the perfect dessert for autumn.

Ingredients

  • FOR THE BARS:
  • ¾ cups Canola Oil
  • 2 cups Sugar
  • 4 whole Eggs
  • 2 cups Cooked Pumpkin
  • 1 teaspoon Baking Soda
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 1 cup All-purpose Flour
  • 1 cup Whole Wheat Pastry Flour
  • FOR THE FROSTING:
  • 4 ounces, weight Cream Cheese, Softened
  • ½ sticks Butter, Softened
  • ½ pounds Powdered Sugar
  • 1 teaspoon Vanilla
  • 1 whole Splash Of Milk, As Needed

Preparation

1. Mix together all of the cake ingredients and spread onto a greased standard sized rimmed cookie sheet. Bake at 350ºF for 15-20 minutes.
2. While the bars are cooking, prepare the frosting. Cream together all of the frosting ingredients.
3. Remove the bars from the oven, and allow to cool completely. Spread the frosting over the cooled bars. Top with walnuts, if desired. Cut into 2″ squares to serve.

what are “cubes”, as in “2 cubes sugar” or “2 cubes pumpkin”?? could it be “cups”?
