Description

These a very rich and moist. I cut them into small brownie bites and put a nice buttercream frosting on them.

Ingredients

  • 4 ounces, weight Baking Chocolate
  • 2 sticks Butter
  • 2 cups Sugar
  • 4 whole Eggs, Separated
  • 1-¼ cup Cake Flour
  • 1 teaspoon Vanilla Extract
  • ½ teaspoons Chocolate Extract

Preparation

Preheat oven to 325ºF. Spray a 9×13 pyrex baking dish and set aside.

Start by melting chocolate over low to medium heat along with butter. Do not heat on high heat! You don’t want to ruin the most important ingredient.

While chocolate is melting, measure sugar and put it in a mixing bowl. Once the chocolate is melted, pour it into the mixing bowl with the sugar. Mix on low.

Beat egg yolks and then fold into chocolate sugar mixture. Slowly add flour then add the vanilla and chocolate extracts to mixture.

Beat egg whites until frothy and then fold into mixture. Pour mixture into greased baking dish and put in the oven for about 20 minutes. I generally use the toothpick method when baking these. To test if they are done, stick a toothpick in the middle. If it comes out clean, they are done. They generally take about 20 minutes to bake.
