Description

This recipe is so simple, so gorgeous, and so ungodly delicious that I simply couldn’t keep it from you guys. I’ve been making it since forever. I know most of you are like myself and neither own nor have any plans to purchase an ice-cream maker. What’s the point if you dust it off once every few years out of guilt? Nah, for this recipe all you need is a little elbow grease (or for my fellow lazy-asses, a stand mixer).

Ingredients

  • 1-½ cup Powdered Sugar, Divided
  • ¾ cups Pom Wonderful Juice (pomegranate Juice)
  • ¼ cups Lime Juice, From 1 Whole Lime
  • 2 cups Heavy Cream

Preparation

1. Measure out 1 ½ c. powdered sugar into a large bowl.
2. Pour pomegranate juice into the powdered sugar, mix with a whisk.
3. Add the lime juice.
4. Pour in the heavy cream. This is so pretty! Mix it up with your whisk a little.
5. Blend until soft peaks form (stand mixers are perfect for this but any handheld blender will do).
6. Pour it in a container that will fit in your freezer. (I recommend any plastic tupperware with a lid. Don’t do what I did and use a metal loaf tin!)
7. Cover with plastic wrap, sealing out as much air as you can, then secure with a rubber band or lid and place in the freezer for at least 7 hours (preferably overnight).
8. Serve in cute cocktail glasses with mint sprigs as a garnish, and enjoy!
