The original recipe for the classic Portuguese Pasteis de nata.
Preheat oven to 250ºF.
Roll out the puff pastry and cut circles about 3 inches diameter. Place circles at the bottom of a nonstick cupcake pan. Refrigerate while you prepare the filling.
Add whipping cream into a big pot and whisk until there are no lumps of cream. Add sugar, yolks and lime zest and mix until sugar is dissolved.
Place pot on the stove over medium heat. Stir constantly until thick. Remove from heat and let custard cool.
Fill puff pastry cups with custard. Bake 15 minutes, or until set.
Chill tarts. Garnish with glass sugar and cinnamon.
