This is hands-down, bar-none, the best chocolate cake I have ever had. Not only is it moist and delicious, but it is the easiest cake to make. Just dump everything in the mixer and voila! Perfect chocolate cake! (Makes perfect chocolate cupcakes, too.)
Beat all ingredients except boiling water in a mixer for 2 minutes. Slowly mix in the boiling water and beat until combined. Batter will seem thin. Pour into greased and floured cake pan and bake for 50 to 60 minutes at 350F. I like to use a deep tube pan, but you can use layer pans or even an oblong pan. If using layer pans, you will need to adjust the baking time to probably 35 to 45 minutes. Test for doneness with a toothpick or cake tester (should come out clean).
To make icing, cream butter. Add icing sugar, vanilla, and cocoa; beat well. Add egg and beat well.
Let cake cool completely before icing.

Yum! I guess this doesn’t really count as a review, since I haven’t actually made this yet, BUT I am going out this afternoon to pick up the ingredients! My daughter is just learning to bake, and just got her first electric beater. The first thing she wanted to bake was chocolate cake, and this one looks very easy! I will have to remember to let you know how she makes out!

LOVED this chocolate cake! I made it only b/c I didn’t have a box mix in my cabinet. I usually don’t care for homemade chocolate cake, but this one was very good and quite moist! My whole family loved it. And, it was easy to make. Thank you for posting it!
