Description

These slightly sweet peppermint perfumed lemon bars are decadent yet simple to make.

Ingredients

  • FOR THE CRUST:
  • 1-⅓ cup Flour
  • ⅓ cups Powdered Sugar
  • 2 whole Lemons, Zested
  • 1 stick Salted Butter, Cold And Cut Into 1/2 Inch Cubes
  • FOR THE FILLING:
  • 4 whole Eggs
  • 1 cup Powdered Sugar Plus Extra For Sprinkling On The Finished Bars
  • ½ cups Lemon Juice
  • 1 whole Lemon, Zested
  • 2 drops Peppermint Oil
  • ½ teaspoons Vanilla Extract

Preparation

Preheat your oven to 350ºF. Grab a 9×13 glass dish and lightly grease it. Set aside.

In a medium sized bowl, whisk together the flour and powdered sugar then mix in the lemon zest. Add the cubed butter, working with your hands combine the butter with the dry ingredients. Continue to work the butter into the flour mixture until it is crumbled, as if you were making biscuits. Finally, press the mixture into the pan and bake for 20 minutes.

While the crust is baking, make the filling. In a large bowl, beat together the eggs and powdered sugar. In a separate bowl combine the lemon juice (I squeezed 2 1/2 lemons to get a half cup) and the lemon zest along with the peppermint oil and vanilla extract.

Once you pull the crust from the oven, turn the oven temperature down to 300ºF and mix the egg mixture and lemon mixture together. Then pour the filling onto the hot crust. Finish baking the lemon bars for 30 minutes.

Once the lemon bars are fully set, pull them from the oven and let them cool entirely before sprinkling with powdered sugar and cutting.
