Description

These are certainly healthier than a slice of pecan pie. But, still a little fancy and not an everyday food! The oats add a bit of fiber, and we are forgoing the buttery crust…..

Ingredients

  • 6 whole Phyllo Dough Sheets
  • 1 cup Chopped Pecans
  • ¼ cups Light Corn Syrup
  • ¼ cups Honey
  • ⅔ cups Rolled Oats
  • 1 teaspoon Pure Vanilla Extract
  • 1 whole Egg, Beaten
  • 1 whole Egg White, Beaten
  • 3 Tablespoons Brown Sugar
  • 2 Tablespoons Butter, Melted And Cooled
  • ½ teaspoons Cinnamon, Ground

Preparation

Preheat oven to 350 degrees (F).

Place one sheet of phyllo dough on a cutting board and spray with nonstick cooking spray. Repeat with two additional layers of phyllo and cooking spray. Using a knife, cut dough into six even 2 1/2 – 3″ squares. Place one square into one cup of a muffin tin, prepared with cooking spray. Repeat for each cup. Repeat process for additional three layers of phyllo dough and six additional muffin cups.

Combine remaining ingredients in a medium bowl. Spoon 2 Tablespoons of batter into each shell. Bake for 20-25 minutes. Remove from oven and cool to room temperature.

I think the corn syrup adds a certain “stickiness” that maple syrup would not, but it would be worth a try for a 1/2 batch!
