During a Christmas project I was making chocolate covered truffles and these little gems were resting before being covered. My sweet husband walked in popped one in his mouth and declared it to be the best thing yet! So now, we make these without any chocolate and they are a family favorite. Easy to make and easy to eat.
1.) In a medium size bowl combine your cereal and powdered sugar.
2.) In a medium size sauce pan, melt your butter over low heat then, add in the peanut butter and stir until melted and completely smooth.
3.) Mix the peanut butter mixture in with the cereal and powdered sugar. Stir until completely mixed together.
4.) Line a baking sheet with parchment paper.
5.) Form the mixture into walnut size balls and lay on the baking sheet.
6.) Refrigerate until firm. Store in an airtight container.

I forgot to mention that when you form the peanut butter truffles, that if you get your hands a little damp the peanut butter will not stick to your hands, and the truffles will have a pretty shine.
