Creamy arborio rice pudding with a yummy peanut butter twist!
In a medium-size saucepan add rice, milk, and sugar over medium heat. Bring to a gentle boil and then reduce to a simmer. Add vanilla extract. Keep an eye on the rice stirring frequently. After 30 minutes test the rice to see if it is done to your liking. Once the rice is cooked remove pot from the heat and stir in the peanut butter. Serve warm. This will make four small servings.
