Mmm… Chocolate and peanut butter, a combination that can’t be beat. The addition of graham crackers makes these easy to handle and shape.
Put graham crackers into a gallon-size plastic bag, seal the bag, and crush to a fine crumb.
Put the peanut butter and butter in a large, microwave-safe bowl, cover loosely with a paper towel, and microwave on HIGH 1 1/2 minutes; stir to combine. Add the powdered sugar and graham crackers; mix thoroughly, until mixture forms a stiff dough.
Using about 1 teaspoon of dough at a time, shape dough into small, flattened circles, and place on a sheet of waxed paper; repeat until all the dough has been used.
Melt the chocolate and shortening in the top of a double boiler.
Drop the peanut butter circles, 5 or 6 at a time, into the melted chocolate, turning with a fork to coat completely. Use a fork to remove them from the chocolate, and place into mini baking cups. Pour any remaining melted chocolate into the cups to top off. Let set, and enjoy!
