Description

Reese’s Peanut Butter Cup-stuffed Brownie Bites! An ooey, gooey brownie made even better with a melty peanut butter cup!

Ingredients

  • 2 cups Granulated Sugar
  • 1-¾ cup Flour
  • 5 whole Eggs
  • 1 teaspoon Salt
  • 1 cup Vegetable Oil
  • 1 teaspoon Vanilla
  • ½ cups Cocoa Powder
  • ½ cups Semi-sweet Chocolate Chips (up To Double This Amount, See Note)
  • 60 whole Mini Reese's Peanut Butter Cups Unwrapped

Preparation

In a large bowl whisk together sugar, flour, eggs, salt, oil, vanilla, and cocoa powder until well combined. Stir in the semi sweet chocolate chips. Make sure to not over mix!

Prepare your mini muffin pans by spraying them with cooking spray. Recipe makes 5 dozen so you’ll probably have to bake them in batches. Preheat your oven to 350 F.

Scoop batter into the pan. Fill the slots about ½ – ¾ of the way up, so there’s a little room for the peanut butter cup stuffed brownie bites to rise.

Bake them for 8 – 10 minutes, or until an inserted toothpick comes out almost clean. It’s OK if these are slightly underdone. Once the brownies are done, remove them from the oven. Gently push a peanut butter cup in the center of the brownie. Let these set in the pan for a couple of minutes. Remove them from the pan and let them cool the rest of the way on a cooling rack!

Notes: If you just want plain brownie bites, I’d double the amount of chocolate chips!

These were delicious! I made some adjustments, mixing the author’s recipe for regular brownies and these brownie bites, because I wanted to make them in regular muffin tins (not mini size). It turned out perfectly, everyone loved them!
