Description

Peanut Butter Rice Krispies Treats covered in a chocolate peanut butter topping and garnished with chopped peanut butter cups.

Ingredients

  • FOR THE RICE KRISPIES TREATS:
  • 2 Tablespoons Unsalted Butter
  • 10 ounces, weight Marshmallows
  • ½ cups Peanut Butter
  • 5 cups Rice Krispies Cereal
  • FOR THE TOPPING:
  • ⅓ cups Butterscotch Chips
  • ⅔ cups Semi-Sweet Chocolate Chips
  • 1 Tablespoon Peanut Butter
  • 1 cup Chopped Peanut Butter Cups

Preparation

For the Rice Krispies treats:
In a large pan, melt the butter. Add the marshmallows and stir over low heat, until completely melted. Remove from the heat and stir in the peanut butter.

Immediately add the Rice Krispies and stir until thoroughly combined. Pour the mixture into a greased 8×8 pan. Press down lightly, to even out the top. Allow the mixture to firm up and cool at room temperature before preparing the topping.

For the topping:
In a double boiler, melt the butterscotch chips, chocolate chips, and peanut butter. Stir until completely smooth. Pour over the top of the Rice Krispies treats, using a spatula to evenly spread it.

Allow the topping to cool just slightly, then top with chopped peanut butter cups. Give the topping a couple hours to firm up before cutting and serving.
