Coffee cake with a twist!
Preheat oven to 375 degrees.
Mix 1/2 cup brown sugar, 1/2 cup flour, 1/4 cup peanut butter, and melted butter until crumbly; set aside.
Stir together remaining 2 cups flour, baking powder, baking soda, and salt in a separate bowl; set aside.
Place remaining 1/2 cup peanut butter and shortening in a large mixing bowl. Beat until creamy. Gradually beat in remaining 1 cup brown sugar. Add eggs, one at a time, beating well after each addition. Add flour mixture alternately with milk, beating well after each addition.
Spread batter in a greased 13x9x2-inch baking pan (any standard casserole dish will do). Top with crumbly mixture. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
