Description

Decadent peanut butter bars topped with a thick layer of jelly. This is one dessert that is sure to make you reminisce about childhood.

Ingredients

  • ½ cups Unsalted Butter, Softened
  • 2 cups Packed Light Brown Sugar
  • 2 cups Peanut Butter
  • 3 whole Eggs
  • 1 teaspoon Vanilla Paste
  • 2-¾ cups All-purpose Flour
  • 2-½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Grape Jelly

Preparation

Preheat oven to 350ºF degrees. Line a 9×13 inch baking pan with foil, leaving a 1-inch overhang. Spray the foil lightly with cooking spray. Set aside.

In a large mixing bowl, beat together butter and sugars until fluffy. Beat in the peanut butter until smooth. Add the eggs, beat until well blended. Stir in the vanilla paste.

In a separate bowl, combine the flour, baking powder, and salt. Stir with a whisk. Add the flour mixture to the peanut butter mixture, stir just until blended.

Spread the batter into the bottom of the prepared pan. Spread the jelly evenly over the batter.

Bake for 25 minutes or until the center is set and bars are golden brown. Allow the bars to cool in the pan on a wire rack for 2 hours. Lift the bars out of the pan by the foil overhang. Cut into squares.
