Whole wheat pie crust and ripe fruit make this an (almost) healthy dessert. But you really should serve it with vanilla ice cream!
Preheat oven to 350 degrees.
Combine first, flour, sugar, and salt in the bowl of a stand mixer. Add butter slowly and mix on low speed until butter is in pea-sized chunks. Slowly add chilled water by the tablespoon and mix just until dough comes together. Chill dough for 30 minutes.
Roll out dough into a 14-inch circle, about 1/8 inch thick. Fold dough in half and then in half again. Place in tart pan and unfold.
Overlap peaches and plums on dough, continuing inward until you reach the center. Brush melted butter on fruit and sprinkle with 1 tbsp sugar.
Bake for 25-35 minutes until fruit is soft and crust is golden brown.
