Peach pecan ice cream … You are going to want to make some of this for the weekend!
Recipe makes approximately 1 1/2 quarts of ice cream (about 6 cups).
In a cold large bowl, mix together eggs and sugar until smooth.
Once you have peeled, pitted and pureed your peaches, pour them into the egg mixture along with the cream, milk, vanilla and salt. Mix well.
Prepare ice cream according to your ice cream maker’s directions.
If you are using the KitchenAid attachment, make sure the ice cream bowl is frozen. Then pour the mixture into the frozen ice cream bowl and let chill for at least an hour in the fridge. Then attach the bowl to your mixer and let it churn for 30 minutes.
Pour in pecans 3 minutes prior to ice cream being done.
