Description

Yummy, buttery crumb with fresh peaches, sugar and love. Cut these babies into bars and try only eating one (or two).

Ingredients

  • 3-½ cups All-purpose Flour, Divided
  • 2 cups Granulated White Sugar, Divided
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt, Divided
  • 2 sticks Butter, Cold, Cut Into Small Pieces
  • 1 whole Egg, Lightly Beaten
  • 5 cups Diced Fresh Peaches (about 5-6 Peaches, Peeled)
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Nutmeg

Preparation

Preheat the oven to 375 degrees F. Grease a 9×13-inch baking pan.

For the Dough: In a medium bowl whisk together 3 cups flour, 1 cup sugar, baking powder and 1/4 teaspoon salt. Use a pastry blender to cut in the butter, and then the egg. The dough will be crumbly. Pat half of the dough into the prepared pan. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.

For the Filling: Place the diced peaches in a large bowl and sprinkle with lemon juice. Mix gently. In a separate bowl whisk together 1/2 cup flour, 1 cup sugar, 1/4 teaspoon salt, cinnamon and nutmeg. Pour over the peaches and mix gently.

Spread the peach mixture evenly over the crust. Crumble the remaining dough over the peach layer.

Bake in the preheated oven for 45-50 minutes, or until the top is slightly brown. Cool completely before cutting into squares.

These were so so good! I used cornstarch instead of flour & they came out great. I will make this again! Thanks so much for sharing this awesome recipe.

These bars are so fantastic I almost can’t stand it. Everyone that has tried them can’t get over how wonderful they are. I have to admit that I made a mistake while putting them together. My pastry blender is a piece of c**p, so I cut in the butter in the food processor. I noticed that it seemed a little dry and sandy, but was able to press half in the bottom of the pan without any problems. I finished with the peach filling, and crumbled the rest on top. I was just getting ready to slip it in the oven when I noticed one stick of butter still laying on the counter! I had only used one stick for the crust! I freaked out a little bit, and just decided to cut it into small chunks and laid them on top of the bars and then baked them. It took about 55 minutes to get a nice brown in my convection oven. We let it cool off a tiny bit, and I dished some out while still warm and glory hallelujah, it was fabulous! It is just heavenly. My husband put a little vanilla ice cream on his and declared it “one of the best desserts of all time”. I told him how I had screwed them up, and he said, “you either screwed them up or made them better.” Anyway, they were excellent either because of or in spite of my mistake. I really do plan to make them the correct way next time, and there is no doubt there WILL be a next time! Thanks for the awesome recipe, it’s a keeper for sure.
