Oatmeal cookies are my favorite so I was happy when I came across this recipe years ago. It is very popular with the Amish in my area.
Preheat oven to 350F.
In a mixing bowl, beat eggs. Add honey, oats, coconut, brown sugar, butter, currants and walnuts; mix well.
Pour into the pie shell. Bake for 40 to 45 minutes or until browned and a knife inserted near the center comes out clean. Cool.
Serve with a dollop of whipped cream or ice cream, if desired.

Really good! It is very close to a pecan pie. I don’t like pecan pies but I liked this! I had to cook it 10 extra minutes and when I inserted a knife in the center it was still a little wet. But I think it would have been over cooked if I baked it any longer. Also, I added a cup of mini-chocolate chips! If I can add chocolate…I add chocolate!

This pie is very sweet and rich. Many people thought it was pecan pie. It was very easy to make. I used dates instead of currents, probably more then 1/3 cup but otherwise followed the recipe exactly. It took longer to bake, but my oven is pretty ghetto. The top browned up fast though, so I just covered the whole thing in foil and kept checking until my knife came out clean.
