Description

This moist and delicious oatmeal chocolate cake with cream cheese frosting has become our family’s all time favorite.

Ingredients

  • FOR THE CAKE:
  • 1-¾ cup Boiling Water
  • 1 cup Rolled Oats
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • ½ cups Butter, Softened
  • 2  Eggs
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 Tablespoon Cocoa Powder
  • 1-¾ cup Flour
  • ¾ cups Chopped Walnuts
  • 2 cups Chocolate Chips
  • FOR THE FROSTING:
  • ½ cups Butter, Softened
  • 8 ounces, weight Cream Cheese, Softened
  • 1 pound Powdered Sugar
  • 1 teaspoon Vanilla

Preparation

For the cake:
Preheat oven to 350 F.

Place oats in a large mixing bowl. Pour boiling water over the oats, and let them sit for 10 minutes. Then add sugars and butter and mix well. Add eggs, and mix. Set aside.

In a medium-sized bowl sift together baking soda, salt, cocoa powder and flour. Add this into the oat mixture and mix until combined.

Fold in the nuts and half of the chocolate chips. Pour mixture into a greased 9×13 pan and smooth the top. Sprinkle remaining chips on top. Bake at 350 F for 30-40 minutes, until a toothpick inserted near the center comes out clean. Then remove cake from the oven and allow it to cool before frosting.

For the frosting:
Combine all of the frosting ingredients in a medium sized bowl, mixing until well combined. Frost cooled cake.

This was an excellent almost hearty cake. It’s incredibly moist, and the oatmeal adds a nice texture. The crunch of the walnuts and the surprise sweetness of the chocolate chips really make it different. I made this and a peanut butter sheet cake from this site for work, and everyone raved over this one.
