My family calls these “Mormor’s Squares” (Mormor = Grandma in Swedish). They remind me of coffee cake. Very easy and quick to make and always a crowd pleaser. Perfect with a cup of coffee.
Preheat oven to 350 degrees.
The cake:
Mix together the cake ingredients. Spread it into a large (17 in x 11 in), greased jelly roll pan. It will be pretty thin.
The topping:
Melt the butter. When melted, add the sugar, stir well. Add the cinnamon and quick oats and stir.
Using a large spoon, drop the topping all over the unbaked cake. Bake for about 20 minutes or until the top of the cake is lightly browned and bounces back when touched.
The topping will have dropped to the bottom of the cake and the cake will have risen to cover the topping. Cool for a short while before cutting. Cut into squares, as large or small as you please. Tastes great when it is warm.
