Muesli is a popular breakfast option, containing healthy rolled oats, dry fruits and nuts. When combined with the cake batter, the result is simply heavenly, the right combination of nutrition and taste.
Mix together sugar and butter or refined oil with a spoon till evenly mixed. Beat in eggs one by one and continue mixing. Then add flour and baking powder. Add milk if you find the mixture a little hard to handle. Keep mixing till the mixture leaves a definite trail when lifted with the spoon.
Add in muesli and reserve about 2 tablespoonful to sprinkle on top of the cake. Add cocoa powder and cinnamon powder.
Transfer to a cake bowl and sprinkle reserved muesli mix on top of the cake mixture. Put inside a preheated 180ºC (about 350ºF) oven and bake for about 30 minutes. Check by inserting a toothpick to see if it is baked fully. The toothpick should come out clean, without any traces of the cake mixture.
