These are a popular Canadian treat that are absolutely delicious. They are sweet and rich and oh so decadent. Even non-coconut lovers have been known to dive in for seconds.
However, they are often made with crushed almonds or walnuts, so my sister and I developed a nut-free version. Creamy and chocolately and coconutty. Enjoy!
First Layer:
Mix the first 3 ingredients in top of a double boiler. Add the egg to cook and thicken. Remove from heat. Stir in the crumbs and coconut. Press firmly into an ungreased 8×8″ pan. Place in the freezer as you make the next layer.
Second Layer:
Cream all layer ingredients together well. Beat until light. Remove pan from freezer and spread mixture over the first layer.
Third Layer:
Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over the second layer and chill in the refrigerator until set.

Hello! I can’t find coconut that is peanut/nut free. Can you suggest a substitution for coconut?

These were awesome! I was disappointed about what seemed to be a frosting layer in the middle and was worried about the final product. After chilling them overnight they rocked! I also (accidentally) used bittersweet instead of semisweet chocolate for the top layer but still it turned out great.
