Description

These granola bars are incredibly easy, and you can fill them with whatever you would like to eat.

Easily changeable to meet all kinds of allergies or dietary restrictions, you can use seed/nut butter, chocolate, dried fruits, or anything else your heart desires.

Ingredients

  • 1-½ cup Rolled Oats
  • 1 cup Dates, Pitted
  • 1 cup Chopped Nuts
  • ¼ cups Honey (sub. Agave Or Maple Syrup)
  • ¼ cups Seed/Nut Butter
  • ⅓ cups Optional Add Ins: Dried Fruit, Chocolate, Coconut Flakes Etc.

Preparation

1. To toast the rolled oats, put them on a baking tray in a single layer. Bake the oats at 350 F for 15 minutes. Remove from oven and set aside.

2. Puree the dates in a food processor, or by hand with a fork until soft. If the dates are a little dry and blending is difficult, soak them for 10 minutes in hot water and blend again.

3. Add nuts, honey, nut/see butter, toasted oats and chocolate chips (or other add-ins of your choice). Stir until blended.

4. Place dough onto a large baking sheet that you’ve lined with parchment paper. Wet your hands and pat it into a square shape in your desired thickness. Put baking sheet into fridge or freezer to set, approximately 20-40 minutes.

5. Cut into eight pieces and serve.

Adapted from Minimalist Baker. Recipe makes eight 1.5″x3″ bars.
