Description

Cool, light and refreshing cheesecake with half the calories and no baking required!

Ingredients

  • 8 ounces, weight Cream Cheese, At Room Temperature
  • ⅓ cups Sugar
  • 1 cup Sour Cream
  • 2 teaspoons Vanilla Extract
  • 3-½ cups Cool Whip
  • 1 whole Graham Cracker Crust
  • 1 can (about 21 Oz. Size) Cherry Pie Filling

Preparation

1. With a mixer, beat cream cheese until smooth. Continue beating and gradually add in sugar.
2. Add sour cream and vanilla to the cream cheese/sugar mixture and beat until smooth.
3. Reduce speed of the mixer and add in Cool Whip. Mix until combined and there are no lumps.
4. Pour into prepared graham cracker crust. Refrigerate for at least 1 hour or overnight.
5. Pour cherry pie filling on top and either serve right away or chill until ready to serve.

This is a very good recipe, I used to make it for work potlucks all the time by request. We are having a potluck tomorrow and I could not remember the amount of sugar and vanilla, thankfully you had it posted here. Thanks you saved me. Nothing worse than bad food at a potluck!

This was super yummy. I actually only used 8 oz of cool whip and that seemed like plenty. Sort of wished it had more of a cheesecakey flavor too it, but nonetheless, super yummy and refreshing. Great summer dessert!
