A light, fluffy, sweet cake that is low in calories, dairy free and loaded with fresh apples.
Preheat the oven to 350°F. Spray a 9″ pie dish with cooking spray; set aside.
In a large bowl add eggs, sugars, and salt. Whisk until combined and smooth. Stir in flour, cinnamon and baking powder, whisk until smooth and no lumps remain. Fold in the sliced apples and vanilla.
Pour the batter into the prepared baking dish and bake for 30 to 35 minutes, until set and lightly browned. A knife tip inserted into the center should come out clean.
Serve slightly warm or refrigerate any leftovers.
