A basic recipe for homemade marshmallows. Supposedly, homemade marshmallows are “the next big thing” in desserts, like cupcakes and macarons. Who cares? They are delicious and easy to make yourself.
Soak gelatin in cold water for 10 minutes. While it is soaking, heat sugar and water to soft ball stage (238ºF). Pour the syrup over the gelatin, stirring constantly until it is completely dissolved. Stir in salt and vanilla.
Beat mixture with a stand mixer for about 20 minutes or until stiff. Pour into a buttered 9x2x13 pan and allow to set. Cut into squares with kitchen shears dipped in hot water, wrap in waxed paper and store in an airtight container.
