These brownies are melt-in-your-mouth, ooey gooey, with chocolate chips in every bite. The coffee adds a unique touch from your traditional brownie and really intensifies the chocolate flavor without overpowering it. First, you get that hit of coffee, then that rich chocolate brownie flavor. It’s an outstanding combination. Personally, I like it even better with a sprinkle of fleur de sel or sea salt!
Preheat oven to 350 F. In a medium bowl set over a pot of barely simmering water, melt the 8 ounces of chocolate chips with the butter. Stir constantly and heat until smooth, then remove the bowl from the heat. Set aside and cool to lukewarm.
Then stir in the sugar, instant coffee and vanilla. Then add the eggs one at a time, stirring well after each. Add salt and flour and mix until just combined. Stir in the chocolate chips and pour the mixture into a lightly greased 9×13 baking pan. Bake for about 25-30 minutes or until a toothpick is inserted and comes out with moist crumbs on it. Cool completely in pan and then cut into squares. Sprinkle with fleur de sel or sea salt if desired.
