Description

Chocolate cookies, chocolate, coffee, and coffee liqueur. What more is there to say?

There is no cooking time, but you need a chill period of 8 hours to overnight.

Ingredients

  • 1-¼ cup Crunchy Chocolate Cookie Crumbs
  • 1 pint Heavy Whipping Cream
  • 1 cup Mascarpone Cheese
  • ½ cups Sugar
  • 2 Tablespoons Rounded, Baking Cocoa
  • 1 teaspoon Vanilla
  • 1 Tablespoon Rounded, Coffee Granules - Crushed
  • 1 Tablespoon Coffee Liqueur
  • 1 Tablespoon Shaved Dark Chocolate

Preparation

Line a spring form cake pan with parchment or waxed paper.
Pulverize cookies in a food processor. You need 1 1/4 cup crumbs. Spread most of cookie crumbs in the bottom of the pan, reserving ⅓ cup.

In a chilled mixing bowl (and with chilled beaters), combine whipping cream, cheese, sugar, cocoa, vanilla, coffee granules, and liqueur. Mix together slowly until incorporated. Then mix on high speed, beating until very fluffy with firm peaks, the consistency of a thick shaving cream.

Spread ⅓ of the mixture in the pan; spoon it in globs, and then gently spread around, pressing down as you go. Sprinkle with ⅓ of the remaining cookie crumbs.

Repeat with the remaining filling, and crumbs, creating three layers. Top with shaved chocolate.

Cover with foil or plastic wrap, and chill at least 8 hours, or overnight. Cut into wedges, and serve!
